Got Leftover Oatmeal?

If you are anything like me I always seem to have just a little oatmeal leftover. We eat oatmeal probably 2 to 3 times a week so I add up all the leftover oatmeal and usually on Saturday, like today, I make something out of it.


Leftover Oatmeal Cookies
2 c. whole wheat flour
1 t. baking powder
1/4 t. baking soda
1 t. salt
1 t. cinnamon
1/4 t. nutmeg
1/2 c. sugar (sucanat)
2/3 c. shortening (coconut oil)
2 eggs
1 1/2 c. cooked oatmeal
1/4 c. raisins (optional)

Mix dry ingredients together. Then add shortening (coconut oil), eggs, and cooked oatmeal. Drop by tablespoon full onto ungreased cookie sheet. Bake at 375 for 12 -15 minutes. Makes 1 1/2 dozen.
