Even More Leftover Oatmeal

For a quick fruit, diary, and fiber filled breakfast or snack... 

Use your oatmeal, usually only 1/2 c., in a smoothie recipe. 
It helps thicken up your smoothie, so don't over add.



Leftover Oatmeal Peach Pie Smoothie

1 c. yogurt
1/2 c. leftover oatmeal
1/2 c. frozen/fresh peach slices
1/2 t. cinnamon
1/4 t. nutmeg
1/2 t. vanilla
1 t. sucanat, maple syrup, or honey

Put all ingredients in a blender. Serve Immediately
Variations of this: Substitute apples or blueberries, or strawberries
for peaches for a different fruit pie smoothie.

More Leftover Oatmeal?

I posted last Saturday about Leftover Oatmeal Cookies and decided I would go along with this theme and see how many recipes can we come up with leftover oatmeal in it. So please feel free to leave a comment about your leftover oatmeal recipes. For today,

Leftover Oatmeal Muffins
1 1/2 c. whole wheat flour
1/4 c. honey
1 t. salt
2 t. baking powder
1/3 c. milk (or a little more if mixture looks too dry)
1/4 c. oil (coconut oil or butter, melted)
1 egg
1/2 c. cooked oatmeal
1/4 c. add ins (like raisins, banana, dried cherries, etc.)

Combine all ingredients and place into muffin cups. Usually makes 6 muffins. I usually double this recipe. Bake at 350 in the oven for 15-20 minutes. Or until desired browning. Serve with orange slices and Blueberry Goodness.

Got Leftover Oatmeal?

If you are anything like me I always seem to have just a little oatmeal leftover. We eat oatmeal probably 2 to 3 times a week so I add up all the leftover oatmeal and usually on Saturday, like today, I make something out of it.


Leftover Oatmeal Cookies
2 c. whole wheat flour
1 t. baking powder
1/4 t. baking soda
1 t. salt
1 t. cinnamon
1/4 t. nutmeg
1/2 c. sugar (sucanat)
2/3 c. shortening (coconut oil)
2 eggs
1 1/2 c. cooked oatmeal
1/4 c. raisins (optional)

Mix dry ingredients together. Then add shortening (coconut oil), eggs, and cooked oatmeal. Drop by tablespoon full onto ungreased cookie sheet. Bake at 375 for 12 -15 minutes. Makes 1 1/2 dozen.
