Yummy, OH, So Yummy Pancakes

Pancakes and Oatmeal at our house is a MUST! They are eaten before I can cook another pan full. (I should really start putting them all in the oven until I'm done cooking....something to think about) So after looking at a couple of places for some good pancake recipes I've come up with this one. We really like fluffy pancakes. Plus they can be soaked too, which I HIGHLY recommend.

Fluffy Yummy Pancakes
1 c. Whole Wheat Flour (or whatever flour you use)
1 c. Buttermilk
1 egg
3 T. butter, melted
3 T. baking powder
1/2 t. salt

To Soak: Mix your flour and buttermilk the night before and leave in a warm place till morning. (Read here why it is better to soak.) These pancakes can be made without soaking them as well (but they are SO much better soaked).

In the morning combine the egg, butter, salt and mix well. After all that is mixed. Stir in your baking powder and let it sit for a 3-5 minutes. Lets the baking powder work better.  Pour 1/3 cup of batter into a well buttered pan/grill. Cook on low-med heat till bubbly and then flip. Cook until done. Serve with Maple Syrup or Sorghum and fruit.
