Whole Wheat Rolls

This post is for Whole Wheat Rolls from thehappyhousewife.com They are very yummy and using a bread machine means less work for you. I hope however to use my bosch in the future to fix these. Here is her recipe:

Use the dough setting (it lets it rise twice) and then form the dough into balls (about the size of a tangerine)  and let rise for another 45 minutes or so. I bake at about 375 degrees for 20 minutes. This recipe makes about 24 rolls.
  • 1 1/2 cups hot water
  • 1/3 cup olive oil
  • 1/3 cup honey
  • 1 egg
  • 2 teaspoons salt
  • 4-4/12 cups whole wheat flour
  • 1 teaspoon gluten
  • 1 Tablespoon yeast
Remember to follow the directions for the dough setting of your specific bread machines. All machines work differently.

Weekly Menu

Well as you can tell I've skipped a week so we're back on this week. Hopefully I can try and stick with it again. It really does help me. Life kinda overwhelmed me lately...so maybe this week we'll stick with this menu. Plus I'm going to try and get ahead this week on meals so the (x2) that you see I'm going to make an extra batch and put them in the freezer....That's my plan anyways.

7 Breakfast
    * Pancake & Sausage Muffins, blueberries
    * Homemade Breakfast Burritos, Oranges
    * Frozen Fruit layered in Yogurt
    * Giant Breakfast Cookies (x2), Blueberry Goodness
    * Homemade Bagels (x2) w/Cream Cheese & Strawberries
    * Soaked Pancakes w/ Frozen Berry Mix (thawed)   
    * Applesauce Bread (x2)

7 Lunches
    * Black Bean & Cheese Burritos, Oranges x2
    * Cheeseburger Macaroni, Sweet Peas
    * Salmon Patties (x2), Squash & Zucchini, Asparagus
    * Sloppy Joes, Carrot Sticks, Mac-n-Cheese
    * Peanut Butter & Honey Sandwiches, Grapes
    * Chicken Noodle Soup w Tuna Sandwiches, Grapes
    * Black Bean Taco Salad

7 Suppers
    * Ranch Cheddar Deer Burgers, Asparagus,
    * Deer Roast, Carrots, Potatoes
    * Fajitas (from freezer) with fixin’s
    * Lasagna Casserole, Salad with Homemade Dressing, Garlic Bread
    * Cabbage Roll Casserole, Sweet Peas

Pumpkin Muffins...with Stevia!

Well I posted a day or so ago that I would like to have less sugar in my diet but the problem is....

I LOVE SWEETS!

That's right give me chocolate ANY day! Dark is the best! I mean have you ever tried Godiva Chocolates? OH MY! That is usually my very seldom treat of all treats. (Thought: I should try and put chocolate in these muffins next time.) 

Okay enough with my rant about sweets, but you do realize....

I LOVE SWEETS!

 But now your recipe
Pumpkin Muffins
2c. Whole Wheat Flour
3/4 to 1 c. Buttermilk
1/2 t. sea salt
1 t. ground cinnamon
1/2 t. ground ginger
1/4t. ground cloves
1/8 t. nutmeg
1/2 t. or 24 drops of Stevia Clear Liquid (See Just a Note Below)
3 T. unsulphured soghrum
1/4 c. coconut oil
2 eggs
1 1/2 c. pumpkin, purred or 1 whole can of pumpkin
1 t. vanilla
1 t. baking powder
1/4 c. raw, unsalted pumpkin seeds (optional)

Soak: Stir together your flour and buttermilk. Use  up to 1 cup of buttermilk to moisten all your flour. Soak for 8 to 24 hours.

Preheat: Turn your oven to 400 degrees.

Mix: In your mixer place your soaked grains and add all your other ingredients except baking powder. Mix on lowest speed until your flour has incorporated all your other ingredients. Once all ingredients are incorporated add your baking powder. Don't over mix just until you can't see the baking powder any more.

Cook: Place your 1/3 c. of mixture in each muffin cup. Place a couple of pumpkin seeds onto of your muffins. Bake in your oven for 20 to 25 minutes or until a fork is inserted and comes out clean.

Just a note: If you don't have Stevia you could also use 3/4 c. of sucanat or regular sugar and reduce the pumpkin to 1 cup.

Gratituesday



Like Laura over at Heavenly Homemakers I too am so thankful for the sun shining. So thankful that spring is here. But most of all I'm thankful that God provides. 

I can sometimes (or usually if I'm writing this honestly) get worried about school, money, am I raising my children correctly, yada yada yada

But then....grace....beautiful grace!!! God is SO amazing!

I'm trying to work up the courage to make some sauerkraut. I'm hopefully going to get me a cabbage from the store today or tomorrow one and I still have a few carrots left in the crisper from my February Azure Order. LOL They've stayed forever! Wish me luck.

Stevia Liquid

So do you have any Stevia Clear Liquid Recipes?  I like sweets, but I want less sugar in my diet. So we're going to try and find good Stevia recipes. Got a good chocolate chip recipe? Muffins? Anything?  I need some ideas.

I just got finished baking some Whole Wheat Pumpkin Muffins using Stevia....(as they cool my family is saying..."Ummm! Those smell good!") Now we'll let them cool and see how they taste.  If they pass the test I'll post that recipe with you.

Granola Ideas Anyone?

I'm wanting to make some granola for my family so that we can "ween" off of cold cereal.  (It's REALLY nice to have that around) So I thought maybe some granola would be a great substitute. What I'm wanting is a recipe that I could cook in the oven after soaking my grains. Any ideas?

Amazingly enough my order was all under $100!

Note: All my mangos were ripe so we ate a few and freezed the rest. My plan now is to see about making a granola cereal mix with my flax seeds and wheat. And of course make bread.

Skillet Cabbage

I can't wait to taste a fresh grown cabbage from my garden. They are coming along but not half as fast as I want them to. I want to say "poof" and there be cabbage.  But I guess I'll have to wait for that home grown taste.

Till then I thought I'd share a long time family favorite. This recipe is what I had as a child back home. My dad doesn't like chicken (so we didn't have too many chicken meals back home unless I requested it, he says he had to eat too many of them as a child LOL) so we had lots of meals with pork or beef. But now that I have my own family to cook for we use deer meat.

Skillet Cabbage

1 lb ground deer
1 onion, diced
1 cabbage, shredded
1 can of rotel (or half if you don't like things too spicy)
1 can of stewed tomatoes
1/4 c. shredded white cheddar for topping

Brown deer meat and onion together in skillet. Chop cabbage and add to the top of deer meat, pour rotel and stewed tomatoes over cabbage. Stir carefully. Let cook slow, stirring often. When cabbage is done top with cheese.Serve with steamed broccoli and carrots for a beautiful colorful meal.

Gardening In March

Well, you know how I finally got all my seeds planted and were starting...

Well some LOVELY creature, I'm sure, went into my garden area and destroyed all those that I was trying to germinate...so back to the drawing board. I might have to buy more seeds even. ARGH!!!

Holiday Cheese Ball

I love Cheese! For those familiar with Wallace and Gromit movies...

"Mmmm...Cheese Gromit!

1 8oz. Cream Cheese
1 c. Pecans, Chopped
1/4 t. garlic powder
1/4. paprika

Let both the cheeses set at room temperature (to make them easier to work with). Mix all cheeses, nuts, and paprika well with hands (great idea for kids). Roll into a ball, chill and roll in garlic powder or other toppings you'd like. I've even rolled it in more nuts. Mmm! Refrigerate and serve with crackers!

Very Yummy Pasta Dish

I'm not sure what to call this recipe but it is very yummy and there are no leftovers at our house.

Pasta Yummy
1 lb ground deer meat (or beef)
1/2 c. onion, chopped
1 t. garlic, minced
3 c. Uncooked Whole Wheat Small Pasta (like bow-tie, rotini, elbow, etc.)
2 to 2 1/2  c. Spaghetti Sauce
2 T. Sucanat
1 pkg. Frozen Spinach, thawed and drained
1 c. Cottage Cheese
2 eggs, slightly beaten
1/2 c. White Cheddar cheese shredded

Brown meat, onion, and garlic. Cook pasta 2 minutes less than pkg. directions if you're going to freeze this recipe, otherwise cook according to pkg. directions. Drain pasta and add meat, spaghetti sauce, sucanat, spinach, cottage cheese, eggs, and cheddar. Gently stir to combine.

To Freeze: Cool to room temp. Place in Freezer bag and Freeze.

To Reheat: Bake in baking dish for 45 minutes at 350 or until heated through.

Carrot Cake with Cream Cheese Icing

Earlier today I told you the cake was smelling oh so yummy...well...

IT IS!!!!

Not to toot my horn but,
that is SOME GOOD CAKE! 

You've got to get a copy of Nourishing Traditions and bake the Carrot Cake it is oh so yummy!

The Smell Is In The Air...

Some people might be posting about how a beautiful spring day is out there window (which I totally am loving myself) but nope, not me. I guess I'm weird like that.

I'm sitting here on the couch after working hard all morning and smelling the sweet aroma of a freshly made carrot cake. I don't know if I will be able to wait till it cools. It smells SO SO SO SO good, if I do say so myself.

I've actually never made a carrot cake before but I have all my carrot pulp from juicing carrots that I needed to make something with it. So I figured why not a carrot cake. I'm using the recipe for Carrot Cake with Cream Cheese Icing from Nourishing Traditions: The Cookbook that Challenges Politically Correct Nutrition and the Diet Dictocrats. I'll have to post later how well it tastes, but as for the smell....

OH SO GOOD!

What are you thankful for today?

I'm thankful for a healthy family. No one is extremely sick, just some runny noses and a cough. Which compared to some is great. So I'm thankful that my family is well. No bad sickness, no hospital, no treatment of any kind. God is good!
